I love pasta and one of my absolute favorites is Gnocchi. Almost every restaurant that offers gnocchi on their menu has potato gnocchi. Now I have nothing against potatoes in fact I love potatoes any way they are made! BUT, ricotta gnocchi are much lighter, have a totally different taste and are great with so many sauce variations. These gnocchi are easy and quick to make and most definitely worth giving a try! Everyone will love them and think you are an Italian chef.
